On a non stick pan, add some vegetable cooking oil in (about 1 tbsp) and wait until the pan medium heat then put your seabass fillet skin side down first. Cook for about 5 min medium high heat then turn over and cook the other side for another few min.
On another pan or small saucepan add some sweet chilli sauce mixture in and mix well until sauce thicken up. Turn the heat off and leave it aside.
Add some cooking oil on a pan medium heat, add basil in and quick stir, they will cook really fast so only cook for a few min and take them of. Out on paper towel.
Plate up time; place seabass fillet skin side up and add some sweet chilli sauce on top and garnish with crispy basil and red chilli
