  16. Take To taste - chicken seasoning powder
  17. Make ready Drizzle of sesame oil (to be added last)
Steps to make Pan Fried Fish in Caramelized Ginger and Lemongrass:
  1. Clean and scale the fish.
  2. A - Season fish. Heat enough oil to pan fry/shallow fry /sear the fish. Pan fry/shallow fry/sear until fish is cooked. Alternatively, fish can also be deep fried. We sometimes prepare our fish both ways; we pan fried or seared our fish slices and we deep fried one whole fish. Place fish on a serving plate and put aside. Prepare ingredients in B for sautéing.
  3. B - Sauté ginger until lightly brown; be careful not to burn it. Add lemongrass and keep frying for few seconds. Stir in garlic and sliced chili. Sauté well over medium low heat. C - Add seasonings. Taste and adjust seasoning accordingly. Drizzle some sesame oil, 2 tsp, mix. Turn off the heat and pour this on the fish. Alternatively, fish slices can be transferred to the pan and mixed with sauce/gravy. Dish up and serve with rice.
