  1. Slice the onions, mushrooms and green pepper and add to a frying pan with the olive oil. Heat on a medium heat.
  2. Wash the spinach and drain the excess water in a colander. Crush the garlic cloves and add to the pan. Once the onion mix has started to soften, add the washed spinach. Continue to cook for 10 mins until the spinach is wilted.
  3. Meanwhile roll the pastry out onto a baking tray. Add the onion chutney and use a spoon to spread over the pastry, leaving a 1 inch gap around the edge.
  4. Add the mixture from the pan to the pastry, again leaving a 1 inch gap around the edge.
  5. Crumble the goats cheese on top.
  6. Place the baking tray in the oven and cook for 15 minutes at 180c, or until the pastry is golden.

Add a little water if the pan dries out. Stir in most of the oregano. Spoon onion mix into the pastry case and dot cheese on top. Lightly beat eggs and cream in a small bowl with some seasoning. This crunchy open filo tart is the perfect light meal when served with salad or eaten on the go.
