The ingredients needed to make Curry Rice:
  1. Prepare 2 and 1/2 cups rice
  2. Take 1 medium onion, diced
  3. Get 4 cloves garlic, minced
  4. Prepare 3 tbsp curry powder

  7. Take 2 medium red bell peppers, diced

Instructions to make Curry Rice:
  1. Heat oil in a pot over medium heat. Add onion, garlic, scotch bonnets, stir fry for a minute. Add curry and ginger powder.
  2. Add parboiled rice, salt, stir and let coat rice evenly. Add chicken stock, seasoning, stir and let simmer for 25 mins.
  3. Add red bell pepper, green beans, carrots, stir and let simmer for 4 mins. Add green pepper.
  4. Curry rice ready to serve.
