Instructions to make Mango Glaze eggless cake:
Wash peel dessed chop mango & made puree/paste in blender.if needed add 1-2 spoon water to blend smoothly
Make glaze.take 1/2 cup puree.add to pot with 1 cup water & powder sugar.when it comes to boil add cornflour slurry & mix well.
Let slurry mix well with continue stirring.no lumps.the glaze start to thicken & shine. Remove from heat.let it cool completely
Make batter. Sift flour with salt,baking powder baking soda powder sugar together
Add oil,yoghurt,mango puree in flour & fold gently.
Fold batter till all ingredients are well mixed.grease a round tin of 6 inches.preheat oven at 180° for 10 min.
Pour batter in mould.make it smooth.bake in oven at 180°c for 35-40 min. Do check at 30 mint.
When cake is done.let it cool down completely.take out from tin.
Place a hard cake base /plate (cardboard ki jo gatta bakery cakes ky neechay hota hy) over a wire rack.place a wide bowl under rack.place cake over cardboard/plate.
Pour over spoon ful of glaze at cake.cover whole cake with glaze.
Let the excess glaze collect in bowl beneath it is reusable later. Keep the cake in fridge for hour or two to set down glaze.
When the glaze is set,decor with red & black cherries & mango chunks. Serve chilled & enjoy mangomasti.
