  1. Take For wheat puris :
  2. Make ready 2 cup wheat flour

  13. Prepare 1/8 tsp asafoetida hing

  16. Get 1 tbsp sugar powder (optional)
  17. Make ready to taste Salt
  18. Get Finely chopped fresh coriander leaves to garnish
  19. Prepare To serve:

Steps to make Puri- Bhaji:
  1. To make puris.. in mixing bowl add wheat flour,oil for moin and salt. Mix and little, little water and bind into semi stiff dough. Keep aside for 1/2-1 hour.
  2. For potato bhaji..peel and cube potatoes. In kadhai add, heat oil, add urad dal saute on slow flame till pinkish. Add mustard cummin seeds as they splutter add curry leaves, tumeric powder and asafoetida, green chillies ginger paste,saute for 30 seconds.
  3. Add cubed boiled potatoes pieces,salt, sugar powder(I didn't use),lemon juice. Mix well and cook for 2 minutes. Serve hot garnish with chopped coriander leaves.
  4. At the time of serving knead dough again and make small flattened balls,roll into 2" round semi thick round puris. Deep fry in hot oil on medium high flame.
  5. Serve/ Relish Delicious Puri-Bhaji with cool mango juice.
