  1. Take 1 medium sized cucumber
  2. Get 2 cups thick yogurt
  3. Prepare as per taste sugar
  4. Get as per taste salt
  5. Prepare 1/4 tsp crushed mustard seeds or mustard dal
  6. Make ready 1 green chilli
  7. Take 4-5 curry leaves
  8. Make ready 1/4 tsp Ghee
  9. Get 1 pinch Asafoetida
  10. Prepare 1/4 tsp cumin seeds
  11. Prepare 1/4 tsp mustard seeds
  12. Prepare Handful chopped coriander
Instructions to make Cool Cucumber Raita:
  1. Wash and grate the cucumber.
  2. Squeeze with palms and remove it's water.
  3. Whisk yoghurt.
  4. Slit the green chillies in between.
  5. Heat ghee in tadka pan, add cumin and mustard seeds in it. Let it crackle, add green chillies and curry leaves in it. Saute it, off the flame.
  6. Add grated cucumber in curd mix it well. Add salt, sugar in it. Add ready tadka on yogurt.
  7. Add mustard dal in raita. Mix it well. Keep it in the refrigerater.
  8. Serve it cool with pulav or as a side dish.
