  1. Make ready 4 sausages (I used pork but chicken goes just as well)
  2. Prepare 1 cal spray
  3. Prepare 2 tsp olive oil
  4. Prepare 2 small (or 1 large) red onion - diced
  5. Get 1 bell pepper - diced
  6. Prepare 1 tsp dried basil
  7. Prepare 1/2 tsp salt
  8. Make ready 1/2 tsp cracked black pepper
  9. Take 1 garlic clove - minced
  10. Get Pinch chilli flakes
  11. Make ready 120 g dry brown rice
  12. Make ready 1 vegetable stock pot mixed with 500ml boiling water
  13. Get 2 medium vine tomatoes - diced
Steps to make Sausage and Rice Casserole:
  1. Preheat grill on med-high. Spray a baking tray with 1 cal spray and place sausages on. Place sausages in grill and cook for 15-20 mins. You could slice into smaller bits raw and cook with pepper and onion instead of grilling. Just make sure the sausage is cooked all the way through before adding the rice.
  2. Heat oil in deep frying pan over medium heat. Add onion and pepper with basil, salt and pepper and sauté until onion is soft, 5-8 mins.
  3. Add garlic, chilli flakes, rice and vegetable stock. Cover and simmer. When sausages are cooked, slice and add to the casserole along with the tomatoes. For an extra tomato taste you could use a can of tomatoes instead. Simmer over medium, covered, until rice is cooked, about 30 minutes. Add more water if necessary. You could start the rice in the vegetable stock in a separate pan whilst preparing the onion and pepper to reduce cooking time.
  4. To serve you can drain or serve with the liquid.
