My grandma Barb only uses cornmeal and a bit of flour for her coating, which I'm sure is the authentic Southern way, but I like to add a bit of panko for a thicker and "prettier". Combine panko breadcrumbs, Italian breadcrumbs and shredded parmesan in a shallow container. I love them served with bacon ranch dip.
