  1. In a steamer steam the cauliflower, carrots and Brussels sprouts. Do not over steam it as it will become mushy. - In a food processor add onion, ginger, garlic, yogurt and onion and purée.
  2. In another pan add oil and heat on medium heat. Add the cumin seeds and mustard seeds. Once it starts fluttering add the purée and stir. Turn the flame to low and add the chilli powder, turmeric, cumin and coriander powder and salt. - Mix well. Add 1/2 cup water and let it cook until the oil starts separating.
  3. Add the steamed cauliflower, carrots and Brussels sprouts and mix well. Add few leaves of coriander. Cover lid and cook on low heat for 2 minutes. Turn off gas and transfer in a serving dish. Enjoy with rice, roti, paratha naan etc.
