The ingredients needed to make Pumpkin Puri:
  1. Get 2 cup grated pumpkin
  2. Get 1 cup jaggery powder
  3. Prepare 1/2 cup sooji
  4. Get 2 1/2 cup atta
  5. Prepare 1/2 tsp salt
  6. Prepare as required Oil for frying
Instructions to make Pumpkin Puri:
  1. Remove the skin of the pumpkin and grate it fine.To it,add sooji,jaggery powder and salt.Let it rest for about 20 minutes.The pumpkin will release water and sooji will absorb it.It should not be too watery.
  2. Now,Add atta to the mixture and make a dough.It will be sticky and soft dough.To make the puri,You can take banana leaf or baking sheet,apply oil in the paper and hands and make small lemon size balls and tap and make thin puri shapes with your hands.
  3. Make few puris and simultaneously heat oil in a kadai/pan,on a medium low flame for frying the puris one by one.It will take time to cook on both sides.It will become dark in colour because of the jaggery.Pumpkin puri is ready.Serve it with hot ghee.
