  4. Add the peas, the carrots, the potatoes and the diced hard boiled eggs in a bowl and leave it to cool
  5. Make the maionese.Put the yolk in a bowl with salt pepper and 3 gr of vinegar. Mix them with a mixer. Very slowly start adding the sunflower oil. Once the oil is added, add the lemon juice and keep mixing until the desired consistency
  6. Add the maionese to the vegetable and egg bowl, add the olive oil, the remaining vinegar, salt and pepper. Mix well
  7. Store in the fridge for 1 hr before eating.
