Instructions to make Oven baked stuffed capsicum:
  1. Method for potato masala stuffing :
  2. Add mustard seeds, cumin seeds in a wok and dry roast for a sec. - Add ginger, garlic and green chilli with little water. Let it cook for a min. Add onion and roast.
  3. Add salt, red chilli powder, turmeric powder, coriander powder, kasuri methi, cumin seed powder, garam masala powder and chaat masala powder. Mix well.
  4. Add water and mix well on slow flame. Add mashed potatoes and mix well. Add lemon juice and mix well. Switch off the flame. - Add coriander leaves and mix well.
  5. Potato masala stuffing is ready. Let it cool completely.
  6. Take capsicum and cut open from the top and deseed it. Fill it with potato masala. Preheat oven to 200*C for 10 min. Take oven proof tray, line it with foil paper. Arrange stuffed capsicum in the tray. Place the tray in the middle rack of the oven.
  7. Bake and grill for 30 min. Then turn the side and again bake for 20 min. Then again turn the side and bake for 10 min. Take it out of the oven. Transfer capsicum with spoon in the serving tray. Garnish with coriander leaves.
  8. Serve hot with chapati or paratha.
