  1. Preheat the oven to 180°c fan.
  2. Use a knife to cut down the middle of the potato, but don't cut all the way through. Cut about 3/4 of the way through. Then continue to make these slits along the entire potato about 1-2mm apart. Repeat with all the potatoes and place them in a deep oven proof tray.
  3. Melt the butter completely in a bowl and the add the garlic paste, dried mixed herbs and pepper. Mix well.
  4. Using a pastry brush, evenly cover the potatoes in all of the butter mixture. You can just spoon it over if you don't have a pastry brush.
  5. Put the potatoes into the oven for 30 minutes. Then remove from the oven and brush/spoon the butter from the bottom of the tray back over the potatoes. Then return to the oven for another 20 minutes. Then remove and brush/spoon with butter again. Then put back into the oven for a final 10-15 minutes until golden and crispy.
