The ingredients needed to make Prawn Fried Rice:
  1. Get Overnight cooked rice
  2. Take eggs
  3. Get Chopped spring onions
  4. Make ready Prawns
  5. Take Carrots (julienned, optional)
  6. Get Shimeiji mushrooms (optional)
  7. Make ready Chopped long beans (optional)
  8. Get Salt
  9. Get Oil
  10. Make ready Pickled green chilli (Sides) (see recipe)
Steps to make Prawn Fried Rice:
  1. Cook the rice and keep it in the fridge overnight to dry.
  2. Add oil to wok and cook pre-cook prawns. Set aside.
  3. Add more oil in the same wok and fry the unbeaten egg whites first before frying the yolks.
  4. Add overnight rice, prawns, carrots, mushrooms and salt. Fry till slightly dry and aromatic. Tossing it every now and then. Turn up fire and quickly turn off to give it the wok hei taste. Add spring onions and give it a toss! Best served with pickled green chilli.
