The ingredients needed to make Minestrone:
  1. Get 1 Tbsp oil
  2. Prepare 1 cup onion, chopped
  3. Prepare 2 carrots, chopped
  4. Get 2 stalks celery, chopped
  5. Make ready 4 cups vegetable or chicken soup
  6. Take 1 cup sweet potato, chopped
  7. Prepare 1 (15 oz) canned navy beans
  8. Prepare 1 bay leaf
  9. Get 1 tsp dried oregano
  10. Prepare 3 leaves napa, chopped
  11. Take 3 green onion, chopped
  12. Get to taste salt and pepper
Steps to make Minestrone:
  1. Put a pan over medium heat and warm oil. Add onion, carrots, celery and stir. Reduce the heat and cook with a lid about 10 mins or until they get soft. Don't forget to stir occasionally.
  2. Add broth, bay leaf, oregano, sweet potato and drained navy beans then cover with a lid. Bring it to a boil, reduce the heat and simmer about 15 mins.
  3. Add napa and green onion and continue to cook another 10 mins. Add some more water if needed.
  4. Salt and pepper to taste and enjoy your hearty warm soup!
