Fresh tabouli salad recipe made with quinoa (gluten-free). Tabbouleh is a Mediterranean vegetarian salad made with lots of fresh parsley and lemon and olive oil dressing. It's my mother-in-laws favourite salad and I normally make it on request specially for her. I prefer flat leaf fresh parsley (also known as Italian Parsley) as it's better texture but curly leaf is alright.

  1. Wash the bulgur wheat and soak it in water for 5-7 minutes till it drain well.
  2. Chop all the vegetables, herbs, green onions and tomatoes draining excess juice if needed.
  3. Place all in a large bowl and toss or mix all gently; parsley, mint, tomatoes, lemon juice, garlic, radish, peppers, cinamon, salt and at the end add the olive oil and flaxseed (optional)
  4. Taste and adjust seasonings as you like while mixing; serve with lettuce leaves.
