Instructions to make Healthy Veggie Boiled Rice:
  1. Peel the skins and slice the radish and carrot into medium pieces.Then cut each pieces half moon.For the radish,soak and wash them into the salty water after peeling its skin to help remove the bitterness for 2-3 times.
  2. Put the veggie stock into the pot,boiling for high heat.Add coriander roots,crushed garlic and sliced radish into the pot.Then boil them on medium heat for 20 mins. until the radish becomes soft.If the stock has reduce halfway through.You can add more 1 cup of water.
  3. When the radish started to cooked.Reduce the heat to almost low.Add carrots and shiitake mushroom.Scoop out the foam on the surface out.Keep boiling until the radishes and carrots will be cooked.
  4. When they has cooked.Add steamed rice and soaked goji berries into the pot.Reduce the heat to low.Keep boiling until the rice become soft and stop the heat.
  5. Put the boiled rice into the bowl.Garnish with coriander leaves and sprinkle white pepper powder on top.Enjoy!
