  2. Place a slice of meat vertically on your work surface, put on some cabbage, cheese (just a little bit), and a piece of tofu on the end closer to you, and wrap it all up tightly. In the meantime mix together the mayonnaise, sake, mirin, sugar and oyster sauce.
  3. Dust the meat rolls lightly with katakuriko (not listed), and pan-fry until browned. When the meat is browned all over, turn down the heat to low, add the sauce ingredients and roll the pieces to coat.
