Instructions to make Mexican Wrap:
In a large bowl take all-purpose flour, baking powder, salt and oil. Mix well. Add warm water, knead a soft dough. Cover with a kitchen towel. Rest it for 20 minutes.
Heat oil in a Karahi. Add chopped ginger garlic. Stir for one minute. Add chopped onion. Cook for 2 minutes until golden in colour.
Add chopped tomatoes. Cook on a medium flame. Add salt, turmeric powder, coriander powder, pepper powder and garam masala powder. Cook for 3-4 minutes.
When oil realises from the sides of the pan, add boiled rajma. Cook for 3-4 minutes. Make it a dry consistency. Switch the flame of.
In a bowl take chopped onion, tomato, capsicum, green chilli, lemon juice, black pepper and salt. Mix well and keep aside.
Knead the dough again for two minutes. Make equal portions from the dough. Take one portion. Roll it make a thin transparent chapati or tortilla. Place it on medium hot tawa. Roast 10-15 second from both the sides. Fold it and cover it with dry cloth. Repeat the process.
Now lay one tortilla wrap on a clean surface. Make a cut from the centre down to the bottom edge.
The tortilla being divided into four quarters. Place different ingredients in each quarters. Place rajma mix in first part. Salad in the second part. Tomato sauce in the third part. Grated cheese in the fourth part.
Fold the wrap, starting from the bottom left quarter. Folding it up over the top left. Then folding it over to the right, then folding it down to the bottom right.
Heat butter in a pan. Grill the wrap in butter from both sides. Cook it on medium flame. Now enjoy the wrap.
