  14. Divide the green pepper mixture and use half to cover the ribs, then place back in the oven and let it cook for another hour. (Open it half way and brush some oil if needed)
  15. Mix the collected dripping sauce thoroughly with the remaining green pepper mixture
  16. Place it on a pan and cook for 5 minutes on a low heat, till it reduces to a gravy consistency
