Get Beans
Get large potato cubed
Prepare large carrots juliennes
Prepare celery sticks chopped
Prepare large onion chopped
Take leeks chopped
Take bay leaf
Get baking soda
Prepare Parmesan rind
Prepare Few parsley leaves chopped
Make ready olive oil
Take vegetable stock or hot water
Prepare Salt
Prepare Black pepper powder
Instructions to make Minestrone Soup:
Soak Beans overnight and boil on low flame for 1 hr depending on the quality of beans with a bay leaf and 1/2 tsp baking soda. Remove the bay leaf. Strain, wash with cold water, strain and set aside.
Chop all vegetables
In a wok heat olive oil and add leek, onion, carrots and sauté until leek & onion are softened.
Add vegetable stock, Parmesan rind and on low flame cook covered for 10 mins.
Add cubed potatoes and beans. Remove the Parmesan rind. Add salt and pepper powder. Cover and cook for 20-30 mins. Add chopped parsley leaves at this time
Set aside. Add to a serving bowl and add lot of grated Parmesan cheese and 1 Tbsp olive oil.
