  4. Remove any excess moisture from the spinach by squeezing it with your hands and then add it to the egg mixture.
  5. Mix the egg mixture with the spinach and then divide into 4 equal parts and add each to 4 different halves of a tortilla and then fold the tortillas in half for large tortillas. For small tortilla 2 will be needed.
  6. Spray the pan with fry lite then fry for 2-3 minutes on each half on low and serve with sour cream, plain yogurt or other creamy dairy sauce of choice.
