  1. Soak rice in water for 30 minutes.chop veggies.make tomato puree
  2. Soak kidney beans overnight and cook till soft. Cook green peas and corn cerenels.remove excess water and keep aside.
  3. Heat Pan I have used pressure cooker as quantity is more.add oil put chopped garlic, saute add chopped onion and saute.add soaked rice and mix well add green peas,corn and chopped capsicum.mix well cook for ten minutes.add tomato puree, red chilly powder, salt, black pepper powder, oregano, chilly flakes.mix well add water to it.cook for five minutes.add cooked kidney beans and water cook for ten more minutes.
  4. Add spring onion. Cook grate cheese cube on hot rice sprinkle some green onions and serve hot.
  5. Mexican food is little spicy but you can adjust accordingly.
