Get 1 cup cauliflower or gobhi cut into small pieces
Take 2 shimla mirch (capsicum)cut into small pieces

Make ready 1 cup small soya chunk
Get 1/2 cup dahi or curd

Take 1 cinnemon stick
Prepare to connect Salt
Take 1/2 tsp haldi(Turmeric) powder
Take 1 tsp red chilli powder
Make ready 1 tsp Coriander power
Take 1/2 tsp garam masala powder
Make ready 1 tsp pav bhaji masala
Get 2 tbsp ghee
Get 2 tbsp oil
Get 2 tsp Chopped Coriander leaves
Make ready 1 tsp Kasuri methi
Take 300 gm long grain rice washed and soaked for 20 min
Prepare 600 ml water
Make ready 2 tbsp kaju/cashew
Make ready 2 tbsp kismish/ raisins
Take 1/2 tsp Biryani Essence
Steps to make Vegetable biryani:
Take a deep pan pour some oil heat it now fry the soya chunks, keep it aside, in same pan add all chopped vegetable like potato, shimla mirch, Gobhi, fry it till turn golden, keep it aside,,
Take a Bowl transfer all fried vegetables into it now add dahi, Salt, red chilli powder, Turmeric powder, Coriander powder, kasuri methi mix well keep the marinated vegetables aside for 10 min
Now take a pan heat it pour the ghee into it now added all whole garam masala,stir for 10sec, now added sliced onions stil continue till onion gets soft and golden, now added ginger garlic paste, saute,now added chopped tomato into it,saute well till Tomato turn soft
Now added marinated vegetables into it saute well, now added rest of dry spices like garam masala and pawbhaji masala mix well, now added soaked rice mix all well in medium flame
Add salt to taste now added water as required, and cover it for 10 min in low flame,
When our rice cooked lastly added Biryani essences and fried dry fruits,off the flame, again cover it for 5min
Our vegetable Biryani is ready serve hot with chutney or raiyta sprinkle some chopped Coriander and Kasuri methi
